A healthy butter alternative
Ingredients:
1 cup corn meal mush (or 1/2 fine corn meal cooked with 1 cup water)
1/4 c water
1/2 c raw cashew pieces
3/4 tsp salt
1/3 cup coconut milk
1 tsp butter flavoring
Directions:
Blend cashews and wter in blender until very smooth. Add coconut milk. Add remaining ingredients and continue blending until smooth.
Yields: 1 pint, 32 servings
